eeprom: remove doc and MAINTAINERS section after driver was removed

Commit 0113a99b ("eeprom: Remove deprecated legacy eeprom driver")
already removes the eeprom driver's code.

Remove also the eeprom driver's documentation and MAINTAINERS section.
