[QuickStart] Add Gaia metrics

In the effort to add FIDO assertion metrics, histograms are being created for Gaia transfers. In this CL we are not yet recording all possible Gaia transfer result failures as there are messages that are received during the FIDO flow that must be addressed first as those unknown messages may portray a wrong status for the FIDO assertion info. The failures will be recorded once there is a finalized unknown messages strategy.
